The vehicle is a 1999 Cherokee Sport, 4.0L with auto trans.
It had 235-75R15 tires on it til today, now it has 30x9.50x15 BF Goodrich A/T tires. The speedometer was right on the money before, now it is off about 3 mph to the low side at 65. I know it is only 3 mph but I would like to get it back accurate.
How can I go about doing this, or is it even possible?

You simply pull your old speedo gear out, swap it with the new one and bolt it back up. It's literly at 10 min job.
When you re-install just make sure you index it correctly for what the new speedo gear is. It will have #'s on the side, just line them up with the mark.

Very easy. I noticed when I did it, the speedo wasn't working. All you do is unscrew it again and turn it so the numbers are facing a dif. direction eventually the gears will touch and it will work again...
